Background
Pappy’s Paddock is a tribute to Gustav Gramp, the second-generation custodian of the 1847 Estate. Recognising the potential of a small parcel of land, Gustav selected it as the ideal site for premium vineyard planting. His sons, Hugo and Fred, later named it “Pappy’s Paddock” in his honour, planting vines to carry forward his legacy. Today, this wine continues to reflect the Gramp family’s deep respect for the land, their commitment to quality, and the enduring bond between generations. Each bottle from Pappy’s Paddock captures the spirit of tradition, craftsmanship, and the vineyard that started it all.
Winemaking
Grapes for the 2021 Pappys Cabernet Sauvignon were picked in April, harvested in the cool of the morning to retain fruit flavour and transported direct to the winery for crushing and destemming into fermenters where the must was inoculated with yeast. The ferments were pumped over twice a day to extract colour, flavour and tannin. The wines were left on skins for six days and on the seventh were gently pressed out. The wines were then matured in a combination of new and seasoned French oak for at least 22 months before the blend is put together and bottled under cork.
Vintage Report
The 2021 vintage in Barossa Valley is considered one of the best in recent years. A dry winter was followed by a mild summer with cool nights, allowing for even ripening and excellent flavour development. Timely rainfall and low disease pressure ensured healthy fruit with vibrant acidity and rich colour. Yields were moderate, and the quality of both Shiraz and Cabernet Sauvignon was outstanding. Wines from this vintage show remarkable balance, intensity, and aging potential, making 2021 a standout year for Barossa reds.

Hints of cinnamon, clove, sage, licorice, bay leaf, cedar, black olive, tobacco leaf and dried herbs and earth complete the scene. Full bodied with refined black fruits, cascading tannins and tight acidity, there is just a touch of blackcurrant leaf on the very tail end of the wine’s retreat.”
